The story of a Parisian invention
Appearing in Paris in the 18th century, the modern restaurant originated with Boulanger, who opened the very first establishment in 1765. He offered specific dishes, called “restaurants” (fortifying broths), in a setting where people could sit down and choose from a menu. This revolutionary concept, with menus and prices displayed, soon became a must. Initially reserved for aristocrats, the restaurant offers a chic ambience and refined service. In the 19th ᵉ century, the emergence of bistros, cafés and brasseries democratized this new way of dining. In these convivial venues, specialties like boeuf bourguignon or blanquette de veau became classics, offering a wide variety of dishes for lunch, dinner, or even lively brunches. From a glass of wine to an evening with friends, these Parisian establishments are the epitome of French art de vivre.
